Fundamental rights? You don't have no stinking fundamental rights.

No matter how I got to the thought, I ended up wondering, how many fundamental rights have been breached by governments around the world in their response to Covid-19?

I'll focus on the US and will use a broad definition of fundamental rights to not get wrapped in Constitutional and Bill of Rights debates.

Right to self-determination
Right to liberty
Right to due process of law
Right to freedom of movement
Right to privacy
Right to freedom of thought
Right to freedom of religion
Right to freedom of expression
Right to peaceful assembly
Right to freedom of association

I believe most Americans would argue that all these rights, explicit or implied are what we would expect and are certainly mirrored in the UN Universal Declaration of Human Rights.  Universal they might be but universally respected?  Not so much.

With vaccine mandates, lockdowns, vaccine passports, masking, quarantine detention centers, restrictions of movement, restrictions on religious services, etc. - which of these rights have been explicitly broken or threatened during the past two years?  Going from actions at the state level, often mimicked at the federal level, we have:

Right to self-determination Denied
Right to liberty Denied
Right to due process of law Denied
Right to freedom of movement Denied
Right to privacy Denied
Right to freedom of thought Threatened
Right to freedom of religion Denied
Right to freedom of expression Threatened and/or Denied
Right to peaceful assembly Denied
Right to freedom of association Denied

Of ten fundamental rights, eight have been clearly and explicitly denied by our government(s) to us as free citizens; one (freedom of expression) has been repeatedly threatened and government has suborned tech companies to participate in suppressing expression; and one (freedom of thought) has been severely threatened by planned and studiously executed propaganda campaigns intended to suppress free thought.

A pretty dismal record for a nominally free people.  I hope we remember and never forget just how precarious our freedoms are in the face of a self-righteous government bent on forcing us to submit for our own good.
